When you mentioned the similar menus and using mirror to make the seams on the other ear, I can not get the actual ear to become its own island. The seam tracing the inside of the ear is copied fine but I can not get the seam of the ear and the head copied correctly.

It sounds like there’s an edge not being selected or mirrored and thus not chopping off the other ear from your head island. Do you get any warnings when you mirror your edge selection like “X edges not mirrored”? And you have Live Unwrap enabled properly?
