When making the armatures for the shoulders and legs, I usually enable “X-Axis Mirror” in the options tab in edit mode and do “Shift+E” to mirror extrude the bones. Is this method doable?

Also, this has been bugging me, but it could be an issue later on. When I create the initial bone and extrude from the head of the bone, it doesn’t seem to be linked to the extruded bone. I don’t know if I explained that properly.

Yes, x-mirror in armature edit mode should respect extruding bones.

Extruding by nature leaves the extruded bone a child of the bone from which it was extruded. If you want to break the parent-child relationship, you can select your extruded bone and hit ALT + P and select the desired option.
