Using 2.78b. @10:00, I cannot find the “Project Paint” option anywhere. Do you know where it is in 2.78b, Kent? Or have they change the name of the option or welded it to something else? Thanks

Project Paint was a separate feature back then. For a while it’s been the default behavior, thus the developers removed the option. So when you seem me choose “Project Paint” in the video, know that’s how Blender paints out-of-the-box now.
