The lesson on custom shapes was a huge help! Searching for an “industry standard” for color-coding animation bone groups and controls didn’t produce much. Is there a common color convention or does each shop/artist/project just create their own?

I’m glad to hear you found the custom shapes info helpful! I doubt there’s an industry standard for color-coding bone groups. In the industry, it’s likely something that’s decided on between riggers and animators on a per-studio basis.
