If you needed this game character to grip a tool or a weapon in game, would you need to fully separate individual figures or is this method just fine?

In a previous tutorial, I think individual fingers were lined out during the skin modifier stage right at the beginning and sculpted afterwards.

Is there a decision point as to when to use which method?

You’ve kinda answered your question with your question: It’s entirely dependent on what your character will be doing. If it’s needed that your character is able to grab and let go of things, individual fingers could be required, especially if the game camera will be close to the hand. If the camera is far away, it could be that the grabbing/let go animation doesn’t need individual fingers.
