I was using the normal Sculpt UI, that worked but did’t have all the functions, so I got the slightly modified one on this page. When I try to cut I get a n error that says “Draw a line with the grease pencil first” Even though I have. The result is that the grease line “cut” becomes an object on its own.

I’ll reflect what niilokin and Fabian have shared, make sure you set Grease Pencil to “Object” instead of “Scene” in the N-panel (view properties). See if that fixes your issue.
