How long did it take you to actually finishing beveling the whole gun?

Haha it’s great. Took me a while to be comfortable with the beveling options. When do you decide to choose “Angle” for the bevel modifier vs None or Weight?

Good to hear! I almost never use None, and sometimes I’ll use Angle if it just happens to need bevels on exactly all those angles, but that’s pretty rare as well. Weight is almost always the best choice.
