how do you make everything so defined? the creases in mine don’t have so much shading in mine.

Whenever I want to get defined creases I switch to Subdivide Edges in the dyntopo settings. That mode will keep your fine topology without regenerating topology over it. Then I establish the crease with the Crease brush followed by Inflate to press the opposing sides of the crevice together.
