How Can I Change the Pie Menu Settings?

I have the “Interface: 3D Viewport Pie Menus” Add-on enabled, and I want to know how to change the way the pie menus are.  I want to not have ctrl-S open a save pie menu, I want tab to open the mode pie menu instead of ctrl-tab, etc.  I also want to change the order that they are in.  I keep moving my mouse in the directions that I used to move it in in Blender 2.79, but I get unexpected results because the pie menu layout has changed.  How can I change that?

I’m not sure about changing the order with the addon since I haven’t messed with that yet, but you can change the pie menu to be Tab instead of Ctrl Tab by checking Tab for Pie Menu in the keymap preferences:
