Just started using blender and I am wondering if I need to invest in a GPU
GPU is definitely a major factor in Blender capability. In general though computer graphics benefits from powerful hardware. If your passion for CG continues to grow you will definitely want to invest in hardware.
It helps to hide the mountains and fog in the viewport when your scene starts lagging. I do this eventually in the course.
Another idea to optimize the scene is to render an image of each tree and use it as a texture plane. Then populate the mountains with planes instead of the 3D tree models. That would surely boost scene efficiency while remaining visually equivalent. If you want to try this approach watch this livestream.
