Mostly I just wanted to use the remesh approach since it’s new to Blender 2.8. But usually I use dyntopo for the basemesh.
There aren’t too many pros and cons for remesh vs dyntopo when generating a simple, single-object basemesh. However remesh is more useful if you’re blocking out a multi-object basemesh (object for torso, object for arm, object, for hand, etc). Julien Kaspar demonstrated this workflow at last years Blender conference.
I’m pretty sure this approach is very popular with Zbrush sculptors. I’m more used to dyntopo so I use that primarily.
