You need to right click on the Custom Property (in the 3D View) and select Copy Data Path. Then hover over the Path (in the Driver Editor) and CTRL+V to paste that Data Path there. Right-clicking on the (red) Path field doesn’t show Copy Data Path, because there is no Data Path yet to copy.
I tried this method in 3.1 and it works like in the video (apart from a slight change in editing the Custom Property, but you’re already past that).
