Hello redrumbaits. I am not familiar with a track pad, but a lot of things have turned around in 2.8.
One major thing is, that Blender used to have Select with Right as default. This is now Select with Left (which you can change in the Preferences > Keymap, you could even use the 27X Keymap). This means that CTRL left click has become CTRL right click (if you use the default left click select, if you select with right it is still CTRL left click). If at some point right clicking doesn’t do what they say in a video, try left clicking and the other way around. (Don’t start panicking immediately…)
Also the Header used to be at the bottom and is now at the top.
Even some things that used to be in the Toolbar (left side) are now in the ‘N-panel’ (on the right).
It’s a bit like moving from the USA to Australia, for instance, and suddenly you’ll have to drive on the other side of the road;)
Once I was on a holiday in Ireland and I couldn’t open my hotel room door (but I just had to turn the key the other way around).
Can’t find the modifiers video you are talking about, so I can’t help you there….although not much has changed with the modifiers, at least not so much that you suddenly can’t understand anything anymore from an older video.
