FYI, you can install more than one version of Blender on the same computer. That way if you want to follow along with the course in version 2.8x but still have 2.9x available for playing with new features you can. The 2.83 LTS versions are available here https://www.blender.org/download/lts/
I do recommend while you are learning to try to stick to consistent version though. Nothing is more frustrating than trying to remember where things are when it keeps moving around on you. The newer features might be cool, but they aren’t going to make a big difference in the techniques and foundation that you are learning.
