This course was recorded with v2.81,
The difference with the subsurf modifier with 3.0 and what you see in the lesson,
the options section has moved and changed slightly and moved to under the new advanced dropdown.
The apply and copy buttons are now located along with other options under the dropdown arrow to the right of the icons at the top of the modifier.
For the issue with the sculpting brushes,
I think there has been a few changes to the way some of the brushes behave since the release of the course.
@theluthier would know more than I about the changes and how to resolve the differences.
