What part of the video are you referring to? Please add timestamps, when possible.
So, what can I tell you, the Color Ramp always goes from balck to white in its default state. It’s never a good idea, to just copy/paste values and expect the same result as in a Tutorial.
And Noise Settings can be very sensitive and can give very different results if you change them slightly. And they usually also depend on the Size of your Objects and whether you Scaled in Object Mode (a very bad habit with Curves, can’t be ‘fixed’ with CTRL+A > Apply > Scale, like with Mesh Objects) or Edit Mode.
But if you add a timestamp and some screenshots, we might be able to see what is actually going on in your case.
