    Hi, I think it’s definetly worth it to start learning even without 2.8 tutorials. You can skip some parts like texturing or lighting if you want but the things you’ll learn in terms of 3D modeling or sculpting are very fundamental things and apply to other programs like Maya or 3DS Max as well. The only annoying part  for me when I used 2.8 for the first time was the change of the shortcuts but after a week I was pretty familiar with them. You definetly won’t have to learn new modeling techniques when you switch from 2.79 to 2.8. The course that helped me the most (and I’ve started to watch a ton of tutorials and courses in the last year) as a complete beginner was the Blender Mesh Modeling Bootcamp Course so if you can you should give it a try.
