I agree with @bsdwerbeagentur, whilst you’ll learn quite a bit from the courses on this site an understanding of anatomy is vital, even for stylized characters. Fortunately CG Cookie does (or did) have an anatomy course! It’s a little old but the knowledge is still very useful, which you can check out here.
That being said, creating characters is a fairly advanced topic. I’m not sure what your understanding of Blender and 3D in general is but I’d personally definitely start with more basic things, along with following the digital sculpting course Julian linked. However if you do have at least a basic understanding of Blender then yeah, jump straight into the digital sculpting course and go from there.
