That ‘New attempt” file looks almost perfect, the only thing I noticed, is the bottom of the head:
That is because in Edit Mode, that part is hidden, so it doesn’t get considered when unwrapping. ALT+H to un-hide it and then re-unwrap.
The rest looks perfectly uniform to me.
