As others have said, there are new fundamental courses coming out, but go through the old courses as well. It’s all good information, and knowledge to fill your head. Regardless of Blender version, all of the classes are still relevant.
The biggest thing with blender is just keep working at it. Pick some courses and work through them. A lot of blender is doing things over and over again and then you start to notice repetition and you start to understand things. Things will become easier as you work away at it.
