I think maybe you are filling a way too big Ngon, try selecting more isolated vertices to make smaller faces, like you did on the front. It’s a bit hard to explain by text since it’s a modeling principle. For the moment try doing exactly what you see on screen, Press Start is an introductory course, it’s not super beginner or a fundamentals, you can watch concepts and know how’s on the Mesh Modeling Bootcamp.
