When I make the select si,ilar:amount of adjacent faces, the etire sphere is selected EXCEPT for the pentagons. Why?

Look at the selection in your image. In order for the Select Similar to work your original selection in vertex mode must be the center of a pentagon. That vertex meets the criteria you are setting with Amount of Adjacent Faces.
