How did Kent make that turn at the corner of the mouth at 3:56?

How did Kent make that turn at the corner of the mouth at 3:56?

He did quick extrude by CTRL+left click, and be aware that surface snapping is enabled at the same time, so he hovered his pointer over the edge to make a turn and Blender snapped it to the surface.

I’m doing those same exact things and mine won’t do that. I have to manually rotate and scale the edge when turning corners.
