I would try to focus on a large project that encompasses everything you’d like to learn. A short film might be a great way to learn about the various aspects of Blender to include modeling, texturing, UV Unwrapping, rigging, animation, composition, etc. It’s easier to stick with a goal when you have something specific to aim for. Please do share your progress, it’s a great way to keep moving forward when others are looking to see how you’re progressing.
