I can get around this by hitting the X and then choosing the file, but why is this different to the way the tutorial shows?

If anyone else runs into this, it’s likely because the texture wasn’t packed during recording. To choose the grime texture you can find it in the left dropdown with the image icon which shows all of the images already inside of Blender.
