What is the hot key he’s using to bring up those shortcuts in the 3d viewport? Can’t find it in the manual, and not mentioned in this video..

Not sure which hotkey you are referring to but if you open the “user interface”, under the “input” tab you’ll be able to do keyword search for hotkeys and reassign them should you need to.

There is also this wiki article for v2.4 but I presume most of the info is still accurate for v.2.7
