How you mark all the top edges by double pressing the LMB?

At 0:27 you somehow mark all the top edges by double pressing the LMB. How?

That is alt+LMB. If you have emulate 3 button mouse turned on you have to double click LMB since alt+LMB is used for orbiting or emulates MMB.
